One of my major weaknesses is pasta. And, oddly enough, one of my least favorite foods is mushrooms. But, this Mushroom Sausage Pasta is amazing! It’s one of my favorite meals to make and one of my families favorite meals to eat. I like to call that a win-win! It’s such an easy meal to prep and is ready in about 30 minutes; which is every Mother’s dream! I’ve made this meal so many times and I think I actually like it a little more each time [if that’s even possible].
Having leftovers for lunch the next day is key in our house and this one totally fits the bill! I love a meal that is satisfying, kid friendly and quick and easy to make! I don’t have time to spend hours in the kitchen after work to make a tasty meal for my family, so this one is a lifesaver!
::Spicy Sausage Mushroom Pasta::
1 lb spicy ground sausage
1/2 lb Rigatoni pasta [I actually use about 3/4 lb pasta because of my LOVE for pasta]
1 15oz can of tomato sauce
1/2 medium onion, diced
1 1/2 cups mushrooms, sliced
3/4 cup red wine
1 tsp Italian seasoning
1 tsp salt
1/2 tsp pepper
2 TBSP parsley
Cook pasta according to the instructions. In a medium pan, saute the sausage & onion until browned [about 5 minutes]. Add the mushrooms and saute for 3 minutes. Then add the tomato sauce, wine, italian seasoning, salt & pepper – stir. Add in 1 TBSP of parsley. Cover & simmer about 20 minutes. Stir occasionally. Add pasta, stir and garnish with remaining 1 TBSP of parsley. Enjoy!
