Santa Fe Tortilla Soup


Fall is one of my favorite seasons!  I love the crisp air, gorgeous leaves & pulling out all of my cozy sweaters.  With that, it also becomes soup season!  That’s right!  There’s nothing like a tasty bowl of piping hot delicious-ness.  And, let me tell you, this soup will not disappoint!  It’s so good, easy to make and you will have your house smelling AH-MAZING!  This soup screams Fall & I highly suggest you throw this into your meal plan!


::Santa Fe Tortilla Soup::


1 lb ground Turkey

1 lb ground Chicken

1 medium onion, chopped

1 1.0oz package Hidden Valley Ranch Dressing [powdered]

2 1.25 oz packages Low Sodium Taco Seasoning

1 15oz can Black Beans – don’t drain

1 15oz can Kidney Beans – don’t drain

1 15oz can Pinto Beans – don’t drain

2 10oz cans of Ro-Tel

1 15oz can Tomato halves

2 cans of white corn – don’t drain

2 cups water

Toppings [optional]

Tortilla Chips


Cheddar Cheese

Green onions


In a large pot, brown the meat and onion.  Add the ranch dressing & taco mix packets until mixed.  Add the remaining ingredients, stir and simmer on low for 2 hours.  Serve with tortilla chips!  Enjoy!

**NOTE: This soup makes a TON, but it freezes beautifully!  Just let the soup cool, store in an air-tight container & freeze!
